Only 4 ingredients makes this sweet salad both quick and delicious.
- 685 g tub of mango in natural juice
- 200 g salad mix
- 250 g halved cherry tomatoes
- 250 g shaved honey ham
- Drain a 685g tub of mango in natural juice, then slice into pieces. Arrange 200g salad mix on a platter. Top with 250g each halved cherry tomatoes and shaved honey ham. Top salad with mango slices and drizzle with ⅓ cup honey and mustard dressing. Garnish with sliced avocado and honey roasted macadamias if desired.
As a variation, use chickpeas or canned salmon in place of the shaved ham.
When mangoes are in season, select ripe but firm fruit to replace the canned variety.
For extra flavour, sauté drained and rinsed chickpeas in a little olive oil and Moroccan seasoning until fragrant. Cool slightly then add to salad before serving.
