With diced bacon, onion and garlic, these beef patties work well in a burger, or alone with mash! With tomato relish, they make a tasty lunch or dinner.
125 g diced bacon
1 onion, chopped
1 clove garlic, crushed
500 g beef mince
1 egg, lightly beaten
½ cup package dried breadcrumbs
¼ cup tomato relish, plus extra to serve
mashed potato, to serve (see tips, below)
salad leaves, to serve
- Heat an oiled, large, nonstick frying pan over a medium to high heat. Add bacon, onion and garlic. Cook, stirring occasionally, for about 4 minutes, or until bacon is lightly browned. Transfer to a large bowl. Cool slightly.
- Add beef, egg, breadcrumbs and relish to onion mixture. Season with salt and pepper. Mix well. Divide into eight portions. Shape into patties.
- Heat same, clean frying pan over a medium heat. Add patties. Cook for 4 minutes. Turn patties. Reduce to low heat. Cook, covered, for a further 4 minutes, or until browned and cooked through.
- Serve patties with extra relish, mash and salad leaves.
