Cooked sweet pastry cases lend themselves to all kinds of great dessert assemblies, including this berry-licious creation with mascarpone cream & lime.
1 cup mascarpone
2 tbsp brown sugar
1 tsp vanilla extract
1 x cooked and cooled sweet pastry case (23cm)
2 cups mixed fresh berries
¼ cup raspberry jam
juice ½ lime
- Combine mascarpone, brown sugar and vanilla. Spread mixture evenly in pastry shell and cover with berries. Combine jam and lime juice and sieve to remove pips. Drizzle over berries.
