Cooking oil spray, to grease
250 g unsalted butter, chopped
1 cup brandy
1 cup caster sugar
2 eggs, lightly beaten
2½ cups plain flour, sifted
1¼ tsp bicarbonate of soda, sifted
1 tsp mixed spice
375 g raisins
300 g currants
- 1 Preheat oven to 160°C. Grease a 30 x 20cm slice tin with cooking oil spray. Line base and sides with baking paper, leaving a 2cm overhang.
- 2 Put butter and brandy in a small saucepan over a medium-low heat. Stir until butter is melted (do not allow to boil). Transfer to a large bowl and cool for 5 minutes.
- 3 Using a whisk, stir in sugar, then egg. Combine flour, bicarb of soda and mixed spice in a separate medium bowl, then add, a little at a time, to butter mixture, stirring until well combined. Stir in raisins and currants until well combined. Spoon into prepared tin and smooth surface.
- 4 Bake for 30 minutes or until cooked when tested with a skewer. Cool in tin. Cut into 24 pieces, then package as gifts.
