These delicious Moroccan chicken and couscous dishes have so much flavour - and now you can cook them at home!
800 g chicken thigh fillets
80 g Moroccan-style seasoning
½ cup water
400 g canned chopped tomatoes
⅓ cup raisins
1 ½ cups couscous
- Trim chicken. Cut in half. Heat a large, oiled frying pan over high heat. Add chicken. Cook for about 3 minutes, on each side, or until browned. Remove.
- Add chopped onion to pan with seasoning. Cook, stirring until soft. Return chicken with tomatoes, ½ cup water and raisins. Season with salt and pepper. Bring to boil. Simmer, uncovered, stirring occasionally for about 15 minutes, or until slightly thickened and chicken is cooked.
- Meanwhile, combine 1½ cups boiling water with 1½ cup couscous in a heatproof bowl. Stand, covered for 5 minutes. Season with salt and pepper. Fluff with a fork.
- Serve tagine over couscous with green beans (optional).
