Vanilla, buttery biscuits are baked then stuck together using pieces of caramely, Mars Bar. These sweet bite-sized biscuits will make delicious teatime treats.
100 g unsalted butter, chopped at room temperature
¾ cup brown sugar, firmly packed
1 tsp vanilla extract
1 ¼ cups plain flour
1 tsp baking powder
2 x 53 g Mars bar
- Beat butter, sugar and vanilla in a small bowl of an electric mixer until fluffy. Add egg. Beat until combined. Transfer to a large bowl. Add combined sifted flour and baking powder. Stir until combined.
- Using clean, wet hands, roll heaped teaspoons of mixture into balls. Place 5cm apart on two oven trays lined with baking paper.
- Cook in a moderate oven (180C), swapping trays halfway through, for about 8 to 10 minutes, or until lightly browned. Remove from oven. Stand for 2 minutes.
- While the cookies are baking, cut each Mars Bar into nine even pieces, about 1cm thick.
- While still hot, carefully lift a cookie from tray. Place a piece of Mars Bar on the base. Top with another cookie. Press together. Repeat with remaining cookies and Mars Bar pieces. Transfer to a wire rack to cool.
