2 tsp rice bran oil
3 cups frozen chopped mixed vegetables
1 tbsp mild curry powder
300 g packet Quorn Mincemeat or real mince meat
800 g canned tomatoes, diced
green beans, to serve (optional)
Sweet potato mash
1.5 kg sweet potato
¼ cup skim milk
20 g butter
Pepper, to taste
- Heat rice bran oil in a frying pan over medium heat. Cook chopped/diced vegetables for 4-5 min. Add mild curry powder and cook, stirring, for 1 min. Add packet frozen Quorn Mince, tomatoes and season to taste. Simmer for 10 min.
- Divide into 4 x 1½ cup ramekins and top with sweet potato mash (see below). Bake at 180°C (160°C fan forced) for 25-30 min or until golden brown and crisp. Served with green beans if desired.
- Peel, chop and cook sweet potato until tender. Drain well. Return to the pan and add skim milk, butter, and pepper to taste. Mash well.
