Great desserts deserve nothing less than lots of edible bling, so don't hold back when decorating your creations.
½ cup caster sugar
finely grated zest and juice 1 lime
5 mint leaves
125 ml water
2 Tbsp white rum (or coconut flavoured white rum)
- Put sugar, lime zest and juice and mint in a small saucepan. Add water and stir to combine. Bring to the boil over a high heat and boil for about 5 minutes or until reduced by half. Remove from heat, stir in white rum and strain through a fine sieve into a jug. Set syrup aside for 30 minutes or until cooled to room temperature (mixture will thicken). Pour over your favourite fruity dessert.
