Give the classical sundae recipe a tropical twist with fresh pineapple slices. Served with toasted coconut, ice-cream & mint, it's a cool & refreshing dessert.
1 pineapple, peeled and cored and sliced lengthways
1 cup fresh mint leaves
½ cup caster sugar
ice-cream, to serve
toasted coconut flakes, to serve
mint sprigs, to serve
- Arrange pineapple slices onto a plate. Place mint leaves and caster sugar in a food processor, process until combined. Sprinkle over pineapple. Serve with scoops of ice cream, toasted coconut and mint sprigs.
