Crispy baked walnut topping and creamy potatoes with cheese underneath. No wonder its such a classic.
1 Tbsp melted butter to grease
1.8 kg desiree potatoes, peeled, thinly sliced
1 brown onion, thinly sliced
2 cloves garlic, thinly sliced
1½ cups grated tasty cheese
Sea-salt flakes and freshly ground black pepper, to season
300 ml thickened cream
50 g butter, diced
¼ cup roughly chopped chives to serve
½ cup walnuts, toasted, roughly chopped to serve
- Preheat oven to 200°C. Lightly grease two 10-cup capacity rectangular baking dishes with butter.
- Put a layer of potato, slightly overlapping, in the base of each prepared dish. Follow with a layer of onion, garlic and cheese. Season with salt and pepper. Repeat layering with remaining potato, onion, garlic and cheese. Pour over cream and top with butter. Cover dishes tightly with foil.
- Bake for 50 minutes, then remove foil and return to oven for a further 30 minutes or until potato is tender and top is golden and crisp. Scatter over chopped chives and walnuts to serve.
