If you've got 15 minutes you've got time to make this quick and tasty fried rice
2 rashers bacon diced
½ onion diced onion
1 cup frozen peas, corn and carrots
2 eggs, scrambled
450 g packet microwave rice, cooked according to packet instructions
1 tbsp soy sauce (or gluten-free alternative), or to taste
- Sauté diced bacon and onion until golden. Add frozen vegetables, scrambled egg, microwave rice and soy sauce to taste. Toss until heated through.
