If vodka is your spirit of choice, this cocktail will become a favourite. With sweet guava nectar and white peach, this makes for a fruity summer sipper.
- 1 white peach
- ¼ cup vodka
- 1 cup guava nectar
- 1 tbsp raspberry cordial
- 1 ½ cups crushed ice
- 300 ml bottle sparkling mineral water, chilled
- Halve peach and remove stone. Thinly slice peach. Divide between two glass tumblers.
- Pour vodka, nectar and cordial into a medium jug. Stir to combine.
- Just before serving, place ¾ cup of the crushed ice into each tumbler. Divide vodka mixture over ice. Top with mineral water. Stir to combine.
To crush ice, try using a food processor, or place ice cubes into a freezer bag, loosely wrap in a tea towel and crush with a rolling pin.
