Share this simple take on a cocktail classic, with seasonal strawberries. The berries can also be used on Greek yoghurt for dessert or in a fruit tartlet.
- 2 punnets fresh strawberries
- 1 ½ cups caster sugar
- 1 vanilla bean, split
- ¼ cup Pimm's
- 500 ml sparkling wine
- Chop 1 punnet of the strawberries into pieces. Combine sugar, vanilla bean, Pimms, chopped strawberries and 1 cup water in a medium saucepan over a medium heat. Simmer for 10 minutes or until strawberries begin to turn brown. Strain through a fine sieve, discarding solids.
- Return strawberry syrup to heat and boil until it begins to thicken and candy. Hull remaining strawberries and stir in. Remove from heat and allow to cool completely.
- Place 2 strawberries and a little syrup in the bottom of each glass, then top up with sparkling wine.
