Four ingredients and ten minutes is all you need to make this stunningly simple Mediterranean-style green salad. The no-cook salad recipe makes a great side!
- 2 zucchini
- 100 g bag rocket leaves
- 200 g pack feta, crumbled
- 1 bunch fresh mint, leaves picked
- ‘Peel’ the zucchini into long ribbons with a potato peeler. Arrange with the rocket on a large platter. Scatter over the feta and mint leaves, and drizzle on your favourite dressing.
