- 1 honeydew melon, peeled, deseeded, chopped
- 125 ml fresh lime juice
- 6 mint leaves
- chilled soda water
- extra mint to serve
- Put melon, lime juice and mint leaves in a blender. Cover and blend until smooth. Transfer to a jug. Cover and put in the fridge for at least 1 hour, or until chilled.
- Pour about 160ml (2/3 cup) melon mixture into each of 8 glasses. Top each glass with about 80ml (1/3 cup) soda water. Stir gently. Serve immediately with extra mint leaves, if desired.
