If you've got 15 minutes you've got time to make this quick and tasty fried rice
- 2 rashers bacon diced
- ½ onion diced onion
- 1 cup frozen peas, corn and carrots
- 2 eggs, scrambled
- 450 g packet microwave rice, cooked according to packet instructions
- 1 tbsp soy sauce (or gluten-free alternative), or to taste
- Sauté diced bacon and onion until golden. Add frozen vegetables, scrambled egg, microwave rice and soy sauce to taste. Toss until heated through.
