This side dish uses only 5 ingredients and is budget-friendly, too! Cauliflower is spiced with harissa, roasted, then tossed with currants and fresh mint.
1.3 kg cauliflower, trimmed
2 tsp harissa spices
¼ cup currants
¼ cup chopped fresh mint
olive oil, for cooking
- Cut cauliflower into florets. Place in a large bowl with seasoning. Drizzle well with olive oil. Toss well to coat. Place on a large oven tray.
- Cook in a hot oven (200C) for about 20 to 25 minutes, or until golden brown and tender.
- Transfer to a serving bowl. Sprinkle with currants and mint.
